After squeezing out the 'milk' from our grated/blended coconut for rice n peas , our daughter Anita (Honours grad of Le Cordon Bleu) decided to make a coconut pie. Nothing wasted - and now we also have dessert from one lowly dry coconut!
She asked me to watch and I left it in a tad too long - hence the very brown edge :-)
